This week in Canning!

I was very surprised today to return from my doctor’s appointment to be met by my FedEx guy in my driveway with a package for me! It was my canner! I wasn’t expecting it until Saturday (especially since it only shipped on Monday!), and here it was.

So this evening I sat down with my giant stack of recipes and worked out how many cans I’d need for all the wonderful things that I was planning on cooking. I came up with a loooonnng list that I will share with you in just a moment. But first I wanted to tell you about some of the things I was planning on canning.

I’ve mentioned Bountiful Baskets before, and this will be my 4th time participating in their Co-Op. I actually wasn’t suppose to get anything this week, because try as I might, I always ended up with a few things I had to waste or toss out. We just couldn’t eat things fast enough, which is why I started canning.

Well, this week they had a deal on both Cherries and Blueberries that was TOO GOOD to pass up. For only $20 I was able to purchase 16lbs (yes sixteen pounds) of sweet cherries, and for $22.50 I purchased 4.5lbs of blueberries. I was just at the store today, and the cherries there were nearly $5/lb. So for the cost of 4lbs of cherries at your conventional grocery store, I got 16lbs.

As you can guess, I’m pretty excited. And a lot of what I’ll be cooking next will reflect my abundance of cherries and blueberries. And of course, there will be things featuring my new pressure canner.

Lucky me this is a 4 day weekend for us because of Memorial Day, so I’ll have hubby here to help wrangle the kidlet and wash dishes while I cook.

I’m both nervous and excited to get going! Everything is pretty straight forward, and easy to do. I’ve already written theĀ adaptationsĀ I need for some of my normal recipes so that they can be safely canned, and all that’s left is to just put the planning into action.
