Cucumber Sandwiches

This is my new favorite snack! It’s quick and easy to prepare the ingredients, and the spread lasts for about a week (well, if you don’t eat it all before then that is!) so you can use it for a nice burst of snacking energy when you realized it’s 1pm and you haven’t eaten breakfast yet. (This seems to happen more often then I like!)

You’ll need the following INGREDIENTS
8oz packaged Cream Cheese, softened (ie. smush it up really good while it’s still in the foil)
1 heaping tablespoon mayo
1/4 cup sour cream
1/2 a package (.7 oz) of Italian salad dressing mix
1 pinch dill weed
2 loaves of your favorite bread (I recommend white/french bread)
2 medium cucumbers, peeled and sliced

DIRECTIONS – (these are crazy simple)
1) Mix together cream cheese, mayo, and sour cream. Add dressing mix and dill weed. Refrigerate over night.

2) Spread mixture on ONE slice of bread, top with cucumber slices, and another slice of bread. Voila! Instant sandwich! And so very yummy too!

The first time I made the sandwich, I made the mistake of putting the spread on both slices of bread, but it was way too much for my tastes. So now I only spread it on one slice of bread. These would be perfect if cut into triangles and served at a tea party, brunch, or baby shower too. You can find the original recipe here.
