Here is another recipe that my daughter enjoyed. Miss Fishsticks couldn’t get enough of these, especially with her Chicken and Rice.
You’ll need the following INGREDIENTS –
4 pounds russet potatoes, peeled and cubed
4 tsp chili powder
2 tsp seasoned salt
1 tsp ground black pepper
2 tsp garlic powder
1 tsp paprika
8oz shredded Colby/Monterey Jack cheese blend
8oz Ranch Dressing (I used Hidden Valley)
1) Preheat oven to 400F and lightly grease a 9×13 baking dish
2) Mix your spices together in a small bowl or ramekin. Sprinkle spices over your potatoes, tossing and mixing well to get them evenly covered. You do not have to use all of your spices, just enough to coat the potatoes. Cut your butter into thin slices and evenly arrange on top of your potatoes. (You can use less butter if you need to.)
3) Cover your dish with foil and place in your oven for 1 hour. Remove from oven, (your potatoes should be nice and tender!), and mix in cheese and Ranch dressing.
4) Cook for 10 more minutes until cheese is melted, golden,and bubbly! Serve and enjoy!
